Vanilla Bean frosting

2 cups of Icing sifted

5 Tbl spoons of butter

2 Tbl spoons of whole milk

1 tsp of vanilla bean.

 

Beat the icing sugar and butter with a electric mixer untill well mixed

Combine the milk and vanilla extract together in a separate bowl, mix well

Add a little of the milk mixture at a time to the butter mixture and beat

Beat untill the frosting is light and fluffy at least 5-10 minutes.

The longer the frosting is beaten, the fluffier and lighter the frosting becomes.

Next week Cream Cheese frosting.

Over this weekend I will be posting my favourite recipes for frosting, so don’t forget to sign and have a read.

Creamy caramel nut toffee

One of the special treats this week is a Creamy Caramel Nut Toffee. I am one of those lovers of creamy fudge and I love the textures of nuts and smooth fudge. It is hard to discipline yourself to eat only one piece.

I am also making Chocolate Fudge made with glucose. I think it gives a gorgeous smoother fudge than the tradition recipes. It is always a little work out for my arms to beat the fudge but nicely rewarded with a piece with a cup of hot chocolate.

Berry berry nice muffins

This weekend I have been creating the flavours for the offerings next week and I was thinking of doing a sweet little treat with berries. After floating around many different flavour combinations I settled on White Chocolate and Berry Muffin with butter cream swirl and berry compote with a dusting of icing sugar.

I am a fan of chocolate (who isn’t?) and I love the sweetness of the white chocolate combined with the berry flavour, and the colours just look so gorgeous together. I will melt down the cooking chocolate into slabs and cut it up to create the chunks (this was popular with the mocha muffin I made last week). I was tossing up whether to top it off with a drizzle of melted white chocolate or icing sugar, but I went with the icing sugar because I think it is a nice simple way to top it off and we don’t want a chocolate overload now do we?

Mocha in a muffin

Muffins are great because you can put any flavours you like into a basic muffin recipe. This week I have created a recipe for a Mocha Muffin. My son loves Mocha Coffees, his favourite includes a generous swirl of whipped cream on top. A lovely treat for any time of the day and so nice with the cream melting into the coffee.

So, I am combining these flavours together. The muffin itself will be coffee with chocolate chunks through it. For this I am going to melt down chocolate bits to create a slab and then break the slab into bigger rougher chunks. I will then make a vanilla icing to go on top and cover with a mocha glaze drizzled over the vanilla icing.

A gorgeous muffin to have with your morning or afternoon coffee.
